gluten free apple cider donuts
Ingredients
- for the gluten-free all-purpose flour (will yield more than needed) —
- 2 cups brown rice flour
- 1 cup millet flour
- 1/2 cup tapioca flour
- 1 teaspoon xantham gum
- for the apple pie spice (will yield more than needed) —
- 2 tablespoons cinnamon
- 3/4 teaspoons nutmeg
- 1/2 teaspoon cardamom
- 1/4 teaspoon ginger
- 1/4 teaspoon allspice
- for the donuts —
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 2 1/2 teaspoons apple pie spice
- 3/4 cup butter, softened, plus 4 tablespoons for the coating
- 1 cup brown sugar
- 1/4 granulated sugar, plus 1/4 cup for the coating
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup apple cider
Instructions
- if you're using store-bought gluten free flour, skip to step 2. to make the gluten-free all purpose flour : mix all of the flours and xantham gum. measure out the amount you’ll need for the donuts and then reserve the rest in a mason jar or another airtight container.
- to make the apple pie spice : mix together the ingredients in a small bowl – you’ll have some left over which you can use for the sugary coating or elsewhere (perfect on fried apples!)
- to make the donuts : mix the flour, baking powder, salt, and apple pie spice in a small bowl and set aside. in a large bowl mixing bowl, use a hand mixer to cream together the 3/4 cups of butter and sugar. add eggs and vanilla and continue mixing. work in dry flour mixture and combine until smooth. slowly add in the apple cider while mixing
- transfer the donut patter to a piping bag or a large ziplock bag. if using a ziplock bag, once the batter is in the bag, seal tight removing any unnecessary air and cut a small hole in one corner of the bag. coat two donut pans with non-stick spray and squeeze batter into each of the cavities – fill about 2/3 from the top (leaving room for the donuts to rise). bake at 350 degrees F for 12-14 minutes until the donuts have risen. remove from oven and allow to cool for about 5 minutes in the pan then transfer to a cooling rack.
- once cool, melt 4 tablespoons of butter in a small bowl. in a separate bowl, mix together sugar and a teaspoon of the apple pie seasoning (or all of it if less than a teaspoon is left). to coat, lightly dip a donut in the butter and then toss in the sugar mixture. store at room temperature in an airtight container for 3 days.
